I love Wednesdays for the simple fact that getting through it signifies that there’s only a couple more days until the weekend. I think because of this fact, Wednesdays tend to be one of the slowest days of the week for me as well.
Once my work day wound down, it was time for a low-key dinner date with Quynh. Today is a rest day for me on my schedule, and I wanted to avoid doing strength training because I’ll be seeing my trainer tomorrow for an intense full-body workout. Working out the same muscle groups back-to-back is a sure way for me to pull something or injure myself. It also gives me a reason to spend time doing things I enjoy more than working out: cooking and eating with friends.
On tonight’s agenda was being a taste tester while Quynh whipped up a batch of peanut butter and jelly cookies and getting a taste of her famous turkey burgers.
The cookies didn’t turn out quite the way they were supposed to, but I enjoyed sampling bits and pieces of them while I waited to get hungry enough to cook up a turkey burger patty. I have no idea what all she throws into her turkey burgers, but the flavor is always incredible, and the turkey is never dry. Rather than eating the patties in a burger, Quynh and I chopped them over an incredibly simple, yet delicious, arugula salad.
We started with a bed of baby arugula and topped the leaves with the chopped patty, fresh shaved parmesan, blood orange, and pear. Fancy, huh?
It looked even more delicious once I dressed it with balsamic + olive oil and tossed it all together.
Eaten along with pieces of fresh French bread from the bakery dipped in olive oil, it was perfection. If only I could be a professional taste tester for a living.
