I don’t know about you, but this week has been KILLER. Long hours at work, catered crap foods, and stress have made these first two (!!!) days of the week harder to bear than normal. My goal for today was to get in more veggies than I have been, and I think I stuck to my goal fairly well.
While I’m not a huge fan of Subway, I’m a huge fan of good deals at Subway. All of their 6” breakfast sandwiches are BOGO this whole month, so I’ve gone here and there with work friends for a super cheap meal. This morning, I got a 6” flat bread sandwich with egg whites, turkey, pepper jack cheese, spinach, tomatoes, cucumbers, bell peppers, and banana peppers…all for only $2. That’s a steal.
Since it was an incredible 86 degrees during lunch, I opted to head to my favorite salad joint to get my beloved Metropolis Salad in its entirety. This thing is literally larger than my head, which is quite a feat. The salad includes mixed greens, baby arugula, romaine hearts, roasted tomatoes, cucumbers, grilled chicken, and mozzarella. It’s to die for.
Then I got something not-so-healthy…COOKIES! They sell really good cookies that are homemade in someone’s kitchen and brought in every day. They’re these fantastic dark chocolate walnut cookies, but the best part is the sprinkle of sea salt on top. Nom nom. These were not the size of my head.
Thao and I decided to have a much-needed workout date night after we each got off. We started off with a quick 2-mile run around my neighborhood before heading back to my place to do a fast circuit. Before I share that with you, I thought I should say that my runs have been getting better! The speed and endurance aren’t coming back as quickly as I hoped (especially considering the race is this Sunday), but I’ve I enjoyed them both yesterday and today. I didn’t focus on my pace or distance, and just got in short, quick jaunts through my ‘hood. I even hit a comfy pace of around 9:30 for a bit today, and a less comfy pace of about 8:20!
Anyway, back to the circuit. We were both pretty hungry at this point, but we knew we needed to get in more of a workout, so we came up with this Quick n Dirty Circuit. The entire circuit only took about 8 minutes with quick rests in between each, so we repeated it. You could easily do it several more times, but food was calling tonight.
We enjoyed a random mix of Qdoba taco fillings that I brought from work and rice and spicy chicken from my mom.
All as the sun was starting to set.
My monster of a cup contained Hawaiian tropical, chocolate, and cake batter yogurt all topped with fruits, a few mini chocolates, and mochi. It was the perfectly refreshing end to a crazy day.
